How to Use Royal Icing

Believe me when I say this looks more complicated than it is.  As long as you have patience, you can do it!  


Step 1 -  Divide the royal icing into bowls based on colors.  Then transfer to squeeze bottles (see Royal Icing recipe for more) 

Step 2 -  Using an icing bottle, build a dam around cookie (like an outline) - the frosting should be a bit stiffer for this part.  Let dry (just a few minutes).

Step 3 - Add a bit more water/lemon juice to the icing and flood the cookie with frosting.  It shouldn’t actually pour out of the bottle but should come out easily. The dam prevents it from spilling out.  Let dry.  

Step 4 - Using a pastry bag and the stiffer icing again, decorate your cookie in layers, allowing it to dry in between each layer.
